How to Make it
- Line a standard 2lb loaf tin with baking paper and lightly grease with coconut oil or spray oil.
- Mix together all the base ingredients in a bowl. Press them into the prepared tin and spread evenly with the back of a spoon. Place into the freezer for a few minutes while you make the filling.
- Mix together all filling ingredients in a bowl or jug. Pour over the base and place into the freezer to set for at least 15 minutes, or into the fridge for a couple of hours.
- Melt the chocolate in a microwave-safe jug or bowl, stirring every 30 seconds until fully melted. It should take about 2 minutes total. Stir in the coconut oil (this will melt in the heat of the chocolate).
- Pour chocolate mixture over the set filling and return to the fridge for 20 minutes.
- It’s key to then slice the bars when the chocolate layer has just set if you want to get a perfect slice with no cracks!
- Store in the fridge for up to two weeks in a sealed-tight container, or freeze for up to one month.
